
You will need:
1 litre of ÁO Prawn, Lobster Broth
600g Pork Ribs
500g Prawns, butterflied / deshelled
Your choice of Noodles (Thick Beehoon, Yellow Noodles, etc)
Morning Glory (Kang Kong) & Bean Sprouts
Fried Shallots
Fresh Cut Chilli
Steps:
Clean pork ribs by blanching them in hot water for 5 minutes.
Rinse the blanched pork ribs under running water to ensure
any scum has been removed.
In a clean pot, bring 1 litre of ÁO Prawn, Lobster and Pork Broth to a slow simmer,and add pork ribs back into the broth.
Slowly simmer the ribs till they are tender (usually an hour). If the broth becomes too thick, add a little water to the broth.
Add prawns into the broth when the pork ribs are tender. Cook prawns gently for 1 – 2 minutes, till they turn orange. Be careful not to overcook the prawns and remove them from the broth once cooked.
In a separate pot, blanch noodles, as well as vegetables.
Place the blanched noodles and vegetables in a bowl, and ladle broth and pork ribs over.
Top with cooked prawns and garnish with fried shallots & cut chilli.
