Ciopinno Seafood Stew

You will need: 

1 ÁO Prawn, Lobster & Pork Broth (1000ml)
Your choice of mixed seafood (Prawns, Clams, Mussels, Lobster, Fish, Squid, etc)
Tomato paste / 1 tin of canned tomatoes
3 - 4 garlic cloves
1 onion, chopped
Olive oil
100g fennel, celery (optional, to taste)
Lemon, Italian parsely (garnish), Red pepper (to taste)
Crusty toasted bread 



In a large pot over medium heat, sauté onions, garlic fennel and celery till soft - usually 6 - 8 minutes

Add in ÁO Prawn, Lobster & Pork Broth and tomato paste / tinned tomatoes and bring to a boil. Cook for 5 minutes to allow flavours to infuse.

Place seafood in broth in batches, starting with seafood that would take the longest - lobsters / squid, prawns, mussels, clams and fish.

Ensure seafood is fully cooked - shellfish have turned bright orange; clams and mussels have opened up; fish & squid have turned opaque.

Garnish with Italian parsley and red pepper flakes.

Serve in large bowls with crusty toasted bread and lemon on the side.
